This soft and moist eggless cake recipe is sure to make birthday parties or occasions Christmas special. These cakes can also be savoured with a cup of tea as an evening snack.


  • 1 Cup Sugar
  • 1 Cup Curd
  • 1 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1 1/2 Cup All Purpose Flour
  • Some Mix Dried Fruits
  • 1/2 Cup Oil
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Fruit Essence
  • 2-3 Pinch Yellow Food Color


  1. Let’s start by greasing the baking tray – Use butter to avoid sticking
  2.  Line butter paper at bottom of tray or layer it with maida
  3. In a large mixing bowl take 1 cup sugar, 1 cup curd, 1½  Tsp baking powder,  ½  tsp baking soda.
  4. Mix well with the help of whisk for 5-6 mnts
  5. Leave the mixture to rest for 5-6 mnts
  6. further sieve 1½ cup maida,
  7. Add some mixed dryfruit or tuttifrutti and give a good mix.
  8. Add ½ cup oil, ½ tsp salt (optional) and 1 tsp fruit essence/ vanilla extract
  9. Whisk again for 2-3 minutes
  10. Sieve maida in the mixture and whisk for 5 mnts
  11. Add ¼ tbsp yellow food colour (optional)
  12. Whisk it and now the batter is ready
  13. Transfer it into the baking tray
  14. Level up the batter and pat the tray twice to remove the air incorporated into the batter.
  15. Place the stand inside an oven and preheat it for 10 mnts on medium flame
  16. Bake the cake for 40-45 minutes on medium to low flame
  17.  After 45 minutes remove it from the oven and let it cool down
  18. Cut it into slices and serve it

Some quick tips

  1. Replace Maida with wheat flour to prepare a healthy cake.
  2. Dry fruits like dates, cashew, walnut can also be added to make it more nutritious
  3. Furthermore, to bake in microwave convection mode pre heat and bake at 180 degrees for 40 minutes..
  4.  This cake stays good for a week when refrigerated
