Evening snacks with tea are one of the favorite pastime of Indian society especially samosas. Instead of regular potato, we will make the stuffing of regular vegetables.

Dough Ingredients:

  • 1 cup all purpose flour
  • ½ cup carrom seed (Ajwain)
  • ½ tsp salt
  • ¼ cup refined oil

Ingredients for filling:

  • 1 tsp mustard oil
  • ¼ Paanch Phoran
  • Some chopped Garlic
  • Some chopped green chillies
  • Some chopped onion, capsicum, carrot
  • ¼ cumin powder
  • ¼ red chilly powder
  • ½ tsp haldi powder
  • ¼ Garam masala powder
  • ½ chaat masala
  • 2 mashed potatoes
  • Make a little paste of Maida with water separately

Steps to prepare dough:

  • Take a cup of Maida or all-purpose flour
  • Add ½ Ajwain seeds and add salt to taste
  • Add ¼ cup refined oil and mic it well
  • Once you add the oil make sure the mixture is soft
  • Add water bit by bit

Steps to prepare filling:

  • Take a pan and add 4 tsp oil in it (mustard)
  • Once oil is hot, add ¼ tsp panch phoran to it
  • Add chopped garlic, green chillies and stir it for a while
  • Add chopped onion to this paste above until onion is cooked and gets soft
  • Add ¼ tsp cumin powder to it
  • Add ¼ tsp red chilly powder
  • ½ tsp Turmeric powder
  • ¼ tsp garam masala powder
  • Add salt to taste
  • Add ½ tsp chaat masala
  • Mix well and add some water to it
  • Cook on high flame for sometime
  • Add carrots and capsicum and mix it well
  • Add mashed potatoes and cook it well on medium flame
  • Your samosa filling is ready

Steps to prepare Samosa Crest:

  • Take a small piece of dough and roll it in circular shape
  • Cut the edges and give it a square shape
  • Cut it in two halves
  • Take one strap and apply maida paste you prepared earlier
  • Place another strap on top in a way that it appears as a cross (refer video)
  • Apply maida paste on it as well
  • Put samosa filling in the centre and roll the lower ends by folding it
  • You can give you own shape or follow the steps in the video
  • Final step is to heat oil in pan and place samosas one by one on medium to high flame
  • Wait till they turn golden brown

Your SAMOSA is ready!
