SHAHI PHIRNI

Shahi phirni is a milk based sweet delicacy from Mughlai times that is made with coarsely ground rice and plenty of dry fruits. Rose water and saffron are added to enhance the flavour. The texture is extremely creamy-rich.

Ingredients:

  • ½ cup basmati rice
  • ½ cup water
  • 1 kg milk
  • 2/3 cup sugar
  • 2 tsp condensed milk
  • Pinch of yellow food color
  • Dry fruits

Steps to prepare:

  • Take ½ cup basmati rice and wash it properly
  • Soak it for 30 mins
  • Transfer it to a mixer grinder, add ½ cup water and prepare a paste
  • Now add 1 kg milk in a pan and boil it after adding the rice paste prepared
  • Keep stirring it and make sure no lumps are formed
  • Add 2/3 cup sugar and add 2 tsp condensed milk
  • Add a pinch of yellow food color
  • Stir it for a while and cook for  a while till it thickens (See Video)
  • YOUR PHIRNI IS READY. Transfer it to the serving bowl and spready cut dry fruits over it

TASTE TIP:

You may keep the phirni in fridge for 1-2 hrs before serving.
