TRI COLOR PULAO

Pulao or polao is a rice dish or, in some regions, a wheat dish, whose recipe usually involves cooking in stock or broth, adding spices, and other ingredients.

Ingredients :

  • 2 cup basmati rice boiled

Ingredients for red chutney:

  • 3 tbsp mustard oil
  • 3 sliced tomato
  • 2 dry red chilly
  • ½ sliced onion
  • 1 tsp salt
  • Some mozzarella cheese or grated paneer
  • Pinch of red fruit color

Ingredients for green chutney:

  • Coriander
  • 2 green chillies
  • ½ lemon juice
  • Salt as per taste

Steps to prepare:

  • Take boiled basmati rice and divide it into 3 portions
  • Once done, prepare red and green chutney separately

For RED RICE

  • Put 3 tbsp oil in a pan and heat it on high flame
  • Add sliced onion and add dry red chillies into half
  • Fry till onion turns golden brown and add sliced tomatoes
  • Add water and mix it well and cook for 10 mins on medium flame
  • Make sure its cooked well and all the water is dried up
  • Add mozzarella cheese and cook for atleast 1 minute till the cheese melts and water is completely dried
  • Add rice portion and mix it well alongwith red color poured in water (refer video)
  • Your red rice is ready

For WHITE RICE

  • Take the other portion of white rice
  • Heat 4 tbsp ghee and 1 tsp Jeera (whole)
  • Let it spatter until it turns brown
  • Pour this on top of white rice and mix it well
  • Add salt as per your taste
  • White jeera rice is ready

For GREEN RICE

  • Take 2 green chillies and add some coriander
  • ½ tsp lemon juice
  • ½ tsp salt
  • Add some water and grind it to a paste
  • Green chutney is ready
  • Mix your last portion of rice with green chutney

FINAL STEP

  • Now place the rice accordingly to form Tiranga (refer video)
  • Your TIRANGA pulao is ready
