SHAHI WHITE MUTTON KORMA

This easy to make delicious mutton curry has a sweet taste and with a slick of oil floating on top. It tastes amazing with rice, idli, dosa, appam and idiappam.

INGREDIENTS

  • 1/2 Kg Mutton
  • 1/4 Cup Curd
  • 1 Tsp. Salt
  • 1 Tsp. Black Pepper Powder
  • 1 Tsp. Garlic Paste
  • 1 Tsp. Ginger Paste
  • 10-12 Cashew
  • 10-12 Almond
  • Some Coconut
  • 2 Green Chilies
  • 1 Bay Leaves
  • 1 Cinnamon Stick
  • 1 Black Cardamom
  • 4 Green Cardamom
  • 4 Cloves
  • 10 Whole Black Pepper
  • 2 Chopped Onion
  • 1/2 Cup Milk
  • 1/4 Cup Fresh Cream
  • 1 Cup Oil

INSTRUCTIONS

  1. First of all wash mutton thoroughly with water 2-3 times and keep aside.
  2. Now to marinate it add ¼ cup curd, 1 tsp salt, 1 tsp black pepper, 1 tsp ginger paste, 1 tsp garlic paste and mix it well
  3. Refrigerate it for half an hour
  4. Add coconut, almond, cashew and 1/.4 cup milk and grind it
  5. In pressure cooker add 1 cup oil, add whole spices and saute it for 1 mnt
  6. Add chopped onion as it softens add marinated mutton
  7. Cook it for 6-7 minutes and add ½ cup water
  8. Put on the lid and after first whistle, cook on low flame for 10 mnts
  9. Remove the lid and roast on high flame
  10. Add almond cashew paste, some water and roast on high flame
  11. Then add ¼ cup fresh cream and roast for 6-7 minute till oil reaches the surface
  12. Add water to make gravy and let it boil
  13. Add chopped coriander and its ready to serve
